This quick and simple recipe has become a favorite in our home. I discovered baked oatmeal while on vacation. My family couldn’t partake in eating it because the cook included flour in her recipe. When we returned home I located a recipe on the internet and went from there. I modified this recipe to use less sugar, butter and salt but you can add more to your liking.

The ingredients are easily modified. You can substitute with your choice of fruit and/or add nuts.

You can eat this for breakfast or enjoy it as an anytime snack. My family loves it when I make extra so that they can snack on it throughout the day. If we have an outing, it is easily packaged.

Ingredients:

3 cups rolled oats

1/2 cup brown sugar

2 teaspoons ground cinnamon

2 teaspoons baking powder

1/2 teaspoon salt

1 cup + 2 tablespoons milk

2 eggs

6 tablesopoons melted butter

2 teaspoons vanilla extract

3/4 cup cranberries

 

DIRECTIONS:

1. Pre heat oven to 350 degrees

2. In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries. Spread into a 9×13 inch baking dish.

3. Bake in preheated oven for 30 minutes.
